I am not shy to say that I am a mama who LOVES food.  I used to be the person who hated cooking. My idea of making a meal was cooking some hamburger helper.  Thank goodness I grew out of that! I am proud to say that my love for food has developed into a love for cooking over the years! I love trying out different recipes and learning how to cook! It has become a fun hobby for me and a great way to relax!!

Homemade Chicken Enchiladas!

Chicken enchiladas are a family favorite, and it all started when I perfected my own home made recipe! One day when I was wanting to eat something but nothing seemed too appealing. I had some chicken, some onion, some green chiles and remembered that was some of the stuff we used in the chicken tacos at a restaurant I used to work at. I decided to try it but with a twist-I would boil the chicken with the veggies and chicken broth instead of just cooking the meat in a frying pan and adding the veggies. Well the chicken turned out to be amazing! So I decided to try it in enchiladas. Since then I have added to the recipe and really made it great! My friends and family have been asking for the recipe! So I am sharing it on my blog!!

What you will need:
1 can diced green chiles
1 small jar of roasted red bell peppers
1/2 medium onion, chopped
1/2 cup jarred sliced jalapeños (optional)
2-3 lbs. chicken breast
chicken broth, 2-3 cans
2 packets enchilada sauce (cook as directed)
small tortillas
cheddar jack cheese

Begin to heat 1 can of the chicken broth in a pot.  Add the can of diced green chiles, the jar of red peppers, onion and jalapeños to the broth.  (The jalapeños will make it spicy, so if you don't want the heat omit from the recipe).  Heat until steaming and add chicken breasts. Add enough chicken broth to just cover the chicken.  Put on a lid and cook on medium about 30-40 minutes, stirring occasionally.  After about 30 minutes, remove lid and check the liquid and see if the chicken can start to be broken down using a wooden spoon.  Continue to cook (without the lid), stir and break up the chicken until most of the liquid is gone. Remove from heat as it will burn quick once the liquid is gone.

Start the enchilada sauce and cook as directed. I choose to use the McCormick brand enchilada sauce but you can use any type you like. The green chile enchilada sauce is also VERY good! As the sauce cooks, you can get the enchiladas ready. Begin using a large scoop of the chicken and rolling it up in the tortilla. Using a greased glass pan, line the enchiladas up end to end, packing tight.  Once all chicken is gone the sauce will be ready. Pour the sauce over the top, getting in the sides and covering all enchiladas.  If you are making more than one pan you may want to make more sauce. My family likes a lot of sauce so we make a lot.

Last but not least, sprinkle (or pile) on the cheese!! Put in a 375 oven for about 5-7 minutes and you are ready to go! Super yummy and pretty easy!

Recipe: Hot Dogs Delicious!

This is a recipe my grandma and my mom made, but I like to add a little twist to it!  This is a great hot dog and sauce and I love to add extra super finely chopped veggies so the kids eat it and don't know what they are getting!! Check it out!:

Cook 1/2 Cup chopped onion in 1 tbsp. hot shortening or oil until tender.  Do not let the onions get brown!!  Now stir in one 14 ounce bottle of ketchup, along with 2 tbsp pickle relish (I prefer 3-4 myself) and 1 tbsp each of sugar and vinegar.  I also like to add in a 1/3 cup each of finely chopped green and red bell peppers and carrots. Heat sauce just until warm, then score hot dogs (1 package) and simmer until hotdogs are completely cooked.  This should be about 10 minutes.  Serve in warm or toasted buns!  

I like to serve this with corn on the cob, which I wash, wrap in tin foil, and bbq or bake in the oven.  This makes the corn amazing and makes a great compliment to the Hot Dogs Delicious!  Add some fruit salad and you have a great meal!

Omaha Steaks Review and Gift Card Giveaway!!

Food is a huge passion of mine! I may not always be the best cook, but at least I try! One problem I have is making the perfect burger patties!  For some reason, I just have the hardest time making them the perfect shape. Maybe it's my little hands, maybe it's just that I don't know what the heck I'm doing. Whatever the reason may be, I choose to get the pre-made patties to make my life easier. And of course what bbq would be complete without doing hotdogs? Well Omaha Steaks has a pretty great Picnic Pack that makes this bbq a breeze!! It comes with 16 (5 oz.) Gourmet Burgers and 16 (3 oz.) Gourmet Franks.  I got to try this pack recently and it was so yummy!

The burgers come in super convenient packages that are 2 to a pack and they are sealed so that you just have to pull the two plastic sheets apart and put them on the grill! They were super good and didn't get hard like some pre-made patties do.  Even the next day when I microwaved left overs they didn't get hard! I was impressed cause that is one thing that I cannot stand. The hotdogs were soooo plump when they cooked! I ate them and they were very delicious and juicy!! These franks have been a customer favorite for years, for any occasion.  The hotdogs are great in a bun or solo! 

Of course, given the name, we know that Omaha Steaks offers far more than just burgers and franks! Tropical Traditions Coconut Peanut Butter Review and Giveaway!

I have been trying many different products from Tropical Traditions. They offer a variety of coconut and coconut oil based products, including Coconut Peanut Butter. It is made from 100% organic dried coconut and 100% organic peanuts. There are no extra additives or preservatives. These are the only ingredients listed on the bottle!! Compare that to other peanut butters, like the leading brand. They have sugar, salt, and vegetable oils to name a few ingredients. The combination of the coconut and peanut butter ground together makes a healthy spread that tastes great!


Even though it has no added sugar, I found this to be a bit sweeter than the average peanut butter. There is less than a gram of sugar naturally in a teaspoon of the peanut butter. Overall it has only a few more calories per 2 tablespoons than the leading brand of peanut butter, but the calories from fat are less in the coconut peanut butter. There is more saturated fat, however, there is only 6 mg of sodium in two tablespoons of the coconut peanut butter, compared to 150 mg in two tablespoons of the leading brand. For me, that was really important, because I don't want to give my family too much added sodium to their diet. Most people have too much sodium daily. The coconut peanut butter is a better source of iron, and actually has some calcium. The leading brand of peanut butter doesn't have a significant amount of calcium. The coconut peanut butter does have less fiber and protein than the leading brand, but only by a gram for protein, and .08 grams for fiber. And there are less carbs in the coconut peanut butter. As far as I was concerned, this is a pretty good alternative to regular peanut butter!!


When I opened the peanut butter, I was surprised that the oil had risen to the top because of the intense heat in my house! Luckily you can just stir it back together to get that great taste!!! This peanut butter is certified USDA organic, so it is guaranteed to be high quality and truly organic! I feel good knowing I am helping my kids eat a little healthier, and it doesn't take much effort or any fighting to eat well!!
